Weekend Cheese Scones

Cheese Scones 

When I owned cafes I used to make these cheese scones every day around 6.30 am so they were freshly baked out of the ven for our regular early-bird clients.  Most days they had disappeared by 11 am.

Enjoy the cheese crust and soft fluffy cheesy centre and serve with butter or vegemite (we lived in the antipodes too long and it’s vegemite all the way 🙂I suppose marmite would be just as good).

Best eaten straight out of the oven they are the ultimate weekend morning treat or brunch time indulgence.

In a bowl mix; 

 

✔︎ 3c flour ( no need to sift) or 380g

✔︎ 6 tsp baking powder 

✔︎ 1 tsp salt 

✔︎ 1 tsp mustard powder 

 

Add;

 

✔︎ 75g butter finely chopped, rubbed into flour to resemble breadcrumbs. 

✔︎ 2c grated cheeses (or two big handfuls – put as much or as little as you like)

 

Add;

 

✔︎ 1.5c milk, mixing in by hand 

 

 

Then;

 

Knead for 3 minutes. 

 

Roll out into a sausage shape.  Leave to rise for 5-10 minutes.  Cut into 6-8 rounds.  Place on a greased baking tray and brush each scone with milk. 

 

Bake for 20 minutes at 180. 

 

Serve with lashings of butter!
