Muesli Bars with sustainable Ingredients

I’ve made these bars using sustainable ingredients in every cafe I owned and they have been loved my many.  They last for ages in an air tight container and are honestly the perfect treat to pull out over the summer when there are excess kids, impromptu visitors and family gatherings.

These bars use natural and sustainable ingredients such as nuts and dried fruits and if looking to reduce your sugar then swap out the brown sugar for honey.  The bars might not harden as well with the honey as they do brown sugar but wow will they taste as good.

I’m sure they are part of your ‘5 a day’ 😉 and if looking for a more sustainable, zero waste cooking approach then substitute nuts or seeds for what you have in your cupboard but make sure the weights are the same.

 

Laura’s Muesli Bars using Sustainable Ingredients

Tip: Buy a pyrex glass jug which has the american cup measurements on it.  It honestly is the easiest way to measure out ingredients and lessens the prep time!

MIX

3/4c flour

1.5 teasp baking powder

1.5 cups oats

1/2 cups sunflower seeds

1/2 cup raisins / or dried fruit of your choice (tip: if the fruit is large then chop it down)

3/4 cup coconut

3/4 cup brown sugar

ADD

150g melted butter and 2 tablespoons of golden syrup .

Mix well and press into tin.

Bake for 20 minutes at 180
