Seriously good picked cucumbers are a Scandinavian recipe and honestly we can’t get enough of them. They seem to taste wonderful with anything. This evening we made homemade pesto pasta and had a side of cucumber with the pesto and it was a divine combo!
You will need:
★ 150 ml of raw apple cider vinegar
★ 1 tablespoon of sugar
★ 1 tablespoon of coriander seeds
★ 1/2 teaspoon of peppercorns
★ a small bunch of dill (approx. 20g)
★ 1 whole cucumber
★ 1 teaspoon of sea salt
How to Make:
✖︎ Sterilise your jar by boiling the kettle and placing your preserving jar (buy one at the supermarket) in the sink. Pour the freshly boiled water over the jar in the sink and leave to sit for 5 minutes.
✖︎ Combine the vinegar, sugar, coriander seeds and peppercorns in a saucepan and heat. Tear a small amount of dill and add in. Bring to the boil and let bubble for 2 minutes before removing from the heat.
✖︎ Thinly slice the cucumber (no need to peel).
✖︎ Put the sliced cucumber in a bowl and sprinkle over the 1 teaspoon of salt. Leave to sit for 30 minutes.
✖︎ Squeeze the cucumber and get rid of the excess water. Finely chop the dill and mix with the cucumber.
✖︎ Put cucumber into your preserving jar and add the vinegar liquid into the jar through a strainer.
✖︎ Cover for 30 minutes before serving.
Perfect to serve as the Scandi’s do with smoked salmon and fresh rye bread. Or if you are like us, serve with virtually anything savoury!
