Laura’s Banoffee Slice Recipe

 

Banoffee Slice.  In my opinion, Banana and Toffee are simply a match made in heaven.  Banana sweetens when cooked and coupled with runny, gooey toffee, and a biscuity base with additional chunks of fresh banana mixed within, this slice is divine.

As you might know, I used to own cafes (I owed 4 between 2007 and 2013) and my love within a cafe kitchen has to be baking a good cake or slice.  I loved it when I was kitchen based testing and creating new recipes and this Banoffee Slice is one I have totally created myself.  Yip, you will not find this recipe in any cookbook anywhere on the planet!

 

 

Laura’s Banoffee Slice 

 

Grease and line a 23cm x 33cm brownie tray or baking tray.  Preheat oven to 180. (Note you could half the baking tray size but please do half the recipe ingredients.  The size of the tin is quite important as your slice may not work out if you don’t stick with the recommended tin size).

 

To make the Banoffee Slice;

 

 → Sift 250g self-raising flour in a bowl (or 2c flour with 2 level tsp of baking powder).

 

→ Rub in 150g of cold diced butter until it resembles fine breadcrumbs. 

 

→ Stir in 150g sugar and two ripe banana’s diced (1 cm pieces).  The mixture will look like a crumble mix now. 

 

→ Spread over tray evenly and bake banoffee base for 25 minutes at 180. 

 

 While the base is cooking prep the top of your Banoffee Slice”. 

 

 Mix the following; 

 

✘ 395g Condensed Milk 

✘ 2 tablespoons of Golden Syrup 

✘ 1/4c of soft brown sugar 

✘ 60g melted butter 

 

 

→ Once the base has been cooked, pour the caramel mix over the banoffee base, then; 

 

→ Slice 3 bananas on an angle and place the sliced pieces in a line on top of the caramel mix. 

 

Bake for 25 minutes at 180. 

 

To serve, cut off all the edges of your banoffee slice to make it look neat and enjoy!  Your Banoffee will keep fresh for up to 14 days in an airtight container.  Please note the biscuit base doesn’t go very hard as a biscuit would, it is more of a softer, crumblier base.
