As Week 3 Lockdown continues who hasn’t done some home baking recently?

Here is my very own recipe for delicious buns that can be made savory or sweet with cheese or cinnamon.  Perfect for Easter weekend treats.

This recipe was created by myself when I owned several cafes and wanted my customers to have a homemade hot bun fresh from the oven when they came in to get their takeaway coffee first thing in the morning.  In the cafes I owned in New Zealand I would bake these in the kitchen around 6.30 am to make sure they were warm and ready to serve at our 7.30 am opening.  Loved by all and always best eaten straight from the oven I hope you bake and enjoy them too.

The Dough

ONE In a bowl add:

300ml warm water

14g yeast

14g sugar (or honey)

2 tablespoons olive oil

Leave to forth for 5 to 10 minutes.

 

TWO In a separate bowl weigh out:

500g Strong Bread Flour

14g salt

 

THREE add the frothy yeasty mix to the flour mix and bring together with your washed (!) hands.  Kneed for at least 5 minutes until the dough feels soft like a baby’s smooth skin.

 

FOUR Leave to rise in a draft-free place for 45 minutes.

 

The Buns

 

FIVE Roll out the dough int a large rectangle.

 

SIX spread either your Cheesy or Cinnamon Mix over the rectangle of the dough.

 

Cheesy Mix: grate two large handfuls of cheese into a bowl.  Crack an egg into the cheese and season with salt and pepper.  Mix.

Cinnamon Mix: soften (but don’t melt) around 60g butter.  Add two tablespoons of cinnamon and a 50g brown sugar.  Mix.

 

SEVEN roll up the dough into a sausage.

 

EIGHT cut into sections and place on a baking tray and bake at 200 degrees for 12 – 15 minutes.

 

NINE Eat soon after coming out the oven.  These buns to freeze and are great for kids lunch boxes too!

 

I like to add a good smearing of vegemite over the dough before tipping the cheese mixture over it (as shown in the image above).  You could add difference ingredients such as Spinach.
